Joe Yonan’s “Eat Your Vegetables: Bold Recipes for the Single Cook” (Ten Speed Press, $24.99) is a great purchase no matter how many veggie fans are in the household. Yonan, the food editor for the Washington Post and author of “Serve Yourself: Nightly Adventures in Cooking For One,” has compiled 80 recipes including vegan recipes such as Spinach Enchiladas, One-Peach Crisp With Cardamom and Honey, and Spicy Basil Tofu Fried Rice.
